Ingredients
  

For the Steak Marinade
  • 1 lb Steak Use flank or sirloin steak for best results.
  • 2 tbsp Olive oil Any neutral oil works well.
  • 2 tsp Chili powder Can substitute with smoked paprika for a twist.
  • 1 tsp Cumin Coriander can be used as a suitable substitute.
  • 1 tsp Salt Consider low-sodium options.
  • 1/2 tsp Pepper Cayenne can be used for extra spice.
For the Vegetables
  • 2 medium Bell peppers Feel free to mix in zucchini or mushrooms.
  • 1 medium Onion Shallots can be a subtle alternative.
  • 2 cloves Garlic Use garlic powder if fresh isn’t available.
For Serving
  • 3 cups Cauliflower rice or salad greens Quinoa can be used for more protein.

Method
 

Preparation
  1. In a bowl, combine the steak, olive oil, chili powder, cumin, salt, and pepper. Marinate for at least 20 minutes.
Cooking
  1. Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side until desired doneness. Remove from the skillet and let it rest.
  2. In the same skillet, add the sliced bell pepper, onion, and garlic. Sauté until tender, about 5-7 minutes.
  3. Slice the steak thinly against the grain.
Serving
  1. To serve, layer cauliflower rice or salad greens in a bowl, top with the sautéed vegetables and sliced steak.
  2. Garnish with fresh cilantro and serve with lime wedges.

Notes

For a smoky flavor, consider grilling the steak. Vary the veggies according to seasonal availability. Top with a dollop of guacamole or salsa for added flavor.
