- If using whole seeds, heat a small pan to medium heat.
- Dry toast the coriander seeds, cumin seeds, fenugreek seeds, green cardamom pods, mustard seeds, black peppercorns, and chilies (if using) for 1-2 minutes, stirring often until fragrant.
- Transfer the toasted mixture to a spice grinder and grind until smooth. Alternatively, you can use a mortar and pestle for a traditional touch.
- If you prefer, sift the spices to achieve a finer powder.
- Mix all the ground ingredients in a bowl and store in an airtight container until you’re ready to use.
Notes
