  • 1 tablespoon Black Peppercorns Ground black pepper is an alternative.
  • 1 tablespoon Mustard Seeds Use ground mustard if necessary.
  • 2 teaspoons Turmeric Yields the iconic yellow color and earthiness.
  • 1 tablespoon Paprika For extra heat, consider dried Kashmiri chilies.
  • 1 teaspoon Ground Ginger Fresh ginger could be used with a slight modification.
  • 1 teaspoon Cayenne Powder Adjust to your spice tolerance.
  • 1 teaspoon Cinnamon Optional step for additional warmth.

Method
 

Preparation
  1. If using whole seeds, heat a small pan to medium heat.
  2. Dry toast the coriander seeds, cumin seeds, fenugreek seeds, green cardamom pods, mustard seeds, black peppercorns, and chilies (if using) for 1-2 minutes, stirring often until fragrant.
  3. Transfer the toasted mixture to a spice grinder and grind until smooth. Alternatively, you can use a mortar and pestle for a traditional touch.
  4. If you prefer, sift the spices to achieve a finer powder.
  5. Mix all the ground ingredients in a bowl and store in an airtight container until you’re ready to use.
