Method
 

Preparation
  1. In a medium bowl, combine the warm water, yeast, and 1 teaspoon of sugar. Let the mixture sit until foamy, about 5 minutes.
  2. In a large bowl, combine flour, salt, and remaining sugar. Add the yeast mixture, olive oil, and yogurt; mix to combine.
  3. Knead the dough until soft and slightly sticky, about 7 to 10 minutes.
  4. Transfer the dough to an oiled bowl, cover, and let it rise until doubled, about 2 hours.
Baking
  1. Preheat the oven to 500°F (260°C) and line baking sheets with parchment paper.
  2. Divide the dough into 12 balls, cover, and let rise for 20 minutes.
  3. Roll the balls into circles 1/4 to 1/2-inch thick.
  4. Bake until puffy and lightly browned, about 8 minutes, checking at 5 minutes.
  5. Transfer to a wire rack to cool.
