Method
Phase 1 – Prep
- Whisk Dry Ingredients. In a large bowl, combine the flour, salt, and instant yeast.
- Add Water. Pour in the lukewarm water to the dry mixture.
- Mix Ingredients. Use a rubber spatula to combine until a sticky dough forms.
- Coat with Oil. Drizzle a little oil over the dough and rub it to coat.
- Cover and Rise. Cover the bowl with a damp tea towel or plastic wrap and let it rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
- Stretch and Fold (optional). If time allows, perform stretches and folds for added strength after the first 30 minutes of rising.
Phase 2 – Cook
- Preheat Oven. If baking immediately, place a Baking Steel or pizza stone in the oven and preheat to 550°F.
- Prepare Work Surface. Generously flour your work surface before working with the dough.
- Divide Dough. Use a bench scraper to cut the dough into four equal portions.
- Shape Balls. With floured hands, roll each piece into a ball, pinching underneath to create a smooth surface.
- Option for Refrigeration. If not using immediately, place dough balls in a storage container, cover, and refrigerate.
- Rest Dough. Let shaped dough sit for 30 to 60 minutes before working again.
Phase 3 – Serve
- Shape Dough Rounds. Handle the dough minimally, shaping it into 10 to 12-inch rounds.
- Prepare to Bake. Transfer the dough onto a parchment-lined pizza peel and drizzle with oil if desired.
- Add Toppings. Top with your choice of sauce and toppings.
- Bake Pizza. Shimmy the pizza into the oven and bake for about 5 minutes until blistered.
- Serve. Remove from the oven, slice, and enjoy!
Notes
For best results, let the dough rise in a warm area and don’t rush the resting time. You can also customize the dough with herbs and spices for added flavor.
