Method
 

Preparation
  1. Preheat the oven to 375 degrees F.
  2. Pat the whole chicken dry using paper towels.
  3. In a small bowl, combine Italian seasoning, garlic powder, onion powder, Kosher salt, ground pepper, and olive oil.
  4. Rub the seasoning mixture generously over the chicken, covering all areas including inside the cavity.
  5. Position the seasoned chicken breast-side up in an oven-safe skillet.
Cooking
  1. Place the skillet in the preheated oven and roast for 60-70 minutes, checking that the internal temperature reaches 165 degrees F.
  2. Once done, cover the chicken with foil and let it rest for 15 minutes before serving.

Notes

For deeper flavors, consider marinating the chicken overnight. Use a meat thermometer to ensure it's perfectly cooked. Spatchcocking the chicken can help it roast more evenly and quickly. Use leftover bones for chicken stock.
