Preparation
- Preheat the oven to 375 degrees F.
- Pat the whole chicken dry using paper towels.
- In a small bowl, combine Italian seasoning, garlic powder, onion powder, Kosher salt, ground pepper, and olive oil.
- Rub the seasoning mixture generously over the chicken, covering all areas including inside the cavity.
- Position the seasoned chicken breast-side up in an oven-safe skillet.
Cooking
- Place the skillet in the preheated oven and roast for 60-70 minutes, checking that the internal temperature reaches 165 degrees F.
- Once done, cover the chicken with foil and let it rest for 15 minutes before serving.
Notes
For deeper flavors, consider marinating the chicken overnight. Use a meat thermometer to ensure it's perfectly cooked. Spatchcocking the chicken can help it roast more evenly and quickly. Use leftover bones for chicken stock.
