Method
- In a large bowl using a handheld or stand mixer with a whisk attachment, whip the heavy cream, sugar, and vanilla on medium-high until medium peaks form, about 3–4 minutes.
- If over-whipped, add a splash of cold heavy cream and gently fold by hand with a spatula until smooth.
- Use immediately or cover tightly and refrigerate for up to 24 hours.
Notes
For the best results, use cold ingredients and avoid over-whipping.
