Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  4. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
Baking
  1. Bake for 25-30 minutes, flipping halfway through, until the edges are crispy and the centers are tender.
  2. Remove from the oven and sprinkle the crumbled feta cheese over the hot sweet potatoes.
  3. Drizzle honey over the feta and sweet potatoes; return to the oven for an additional 5 minutes to warm the cheese.
  4. Garnish with fresh thyme, if using, and serve warm.

Notes

Common mistakes to avoid: Overcrowding the baking sheet can cause steaming instead of crisping. Not flipping the rounds halfway may prevent an even cook on both sides. For extra crispiness, try soaking the sweet potatoes in water for 30 minutes before baking.
