Ingredients

Main Ingredients
  • 1.5 lbs boneless skinless chicken breast (or thighs) Use chicken thighs for an even richer flavor.
  • 3 tablespoons minced garlic Fresh garlic gives the best flavor, but pre-minced can be used.
  • 0.5 cup honey A natural sweetener that pairs beautifully with garlic and soy.
  • 0.5 cup soy sauce Or tamari for gluten-free; essential for flavor.
  • 2 teaspoons chili garlic sauce Adjust for preferred level of heat.
  • 0.5 tablespoon cornstarch (optional) Helps to thicken the sauce for a richer texture.

Method

Preparation
  1. Whisk together minced garlic, honey, soy sauce, and chili garlic sauce in a bowl until the honey has fully dissolved to create the Honey Garlic Sauce.
  2. Place the chicken breast at the bottom of your slow cooker to ensure even cooking.
  3. Pour the honey garlic sauce over the chicken, ensuring all pieces are coated.
  4. Turn the slow cooker to high and cook for 2-3 hours, or low for 4-5 hours.
  5. Once cooked through and the internal temperature reaches 165ºF, shred the chicken with two forks.
  6. If desired, thicken the sauce by removing 1/4 cup of liquid, whisking in cornstarch until dissolved, and then returning it to the slow cooker.
  7. Add the shredded chicken back to the crockpot, mix, and let it cook on high for an additional 10 minutes.
  8. Serve plated with your favorite grain and vegetables, adding sesame seeds and green onion for extra flavor.

Notes

Using thawed chicken is preferred for even cooking. Accurate measurements are important for flavor balance. Marinate chicken in sauce for an hour for deeper flavor and feel free to experiment with different vegetables like bell peppers or snap peas.
