Preparation
  1. In a bowl, whisk together honey, soy sauce, lime juice, and minced garlic to create the marinade.
  2. Place chicken breasts in a resealable bag or dish, pour the marinade over, and refrigerate for at least 30 minutes, or up to 4 hours.
Cooking
  1. In a skillet over medium-high heat, add olive oil and allow it to warm until shimmering.
  2. Remove chicken from the marinade (reserve the marinade) and place it in the skillet, sprinkling with salt and pepper. Cook for about 7-8 minutes per side until golden brown and cooked through.
  3. Pour the reserved marinade into the skillet after removing the chicken. Bring to a simmer, cooking for 2-3 minutes until slightly thickened.
Serving
  1. Slice the chicken, drizzle with the sauce, and garnish with chopped cilantro or parsley.

Notes

Pair with fluffy jasmine rice or quinoa, and steamed vegetables for a complete meal. Leftovers can be stored in an airtight container for up to 3 days, or frozen for 2-3 months.
