Preparation
- In a bowl, whisk together honey, soy sauce, lime juice, and minced garlic to create the marinade.
- Place chicken breasts in a resealable bag or dish, pour the marinade over, and refrigerate for at least 30 minutes, or up to 4 hours.
Cooking
- In a skillet over medium-high heat, add olive oil and allow it to warm until shimmering.
- Remove chicken from the marinade (reserve the marinade) and place it in the skillet, sprinkling with salt and pepper. Cook for about 7-8 minutes per side until golden brown and cooked through.
- Pour the reserved marinade into the skillet after removing the chicken. Bring to a simmer, cooking for 2-3 minutes until slightly thickened.
Serving
- Slice the chicken, drizzle with the sauce, and garnish with chopped cilantro or parsley.
