- Prepare the Marinade by whisking together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper in a mixing bowl.
- Marinate the Chicken in a resealable bag with the marinade for at least 30 minutes or overnight for better flavor.
Cooking
- Preheat your grill or grill pan over medium-high heat.
- Grill the marinated chicken for 6-7 minutes on each side until cooked through (165°F/75°C).
- Let the chicken rest for about 5 minutes before slicing.
Assembly
- Mix diced avocado with extra lime juice, olive oil, salt, and pepper, then add chopped cilantro or parsley.
- Serve the sliced chicken over jasmine or basmati rice, topped with the avocado mixture, chili flakes, and toasted sesame seeds.
Notes
Double the batch for meal prep; grilled chicken keeps well in the fridge for 3-4 days. Experiment with different herbs in the avocado mix.
