Method
 

Preparation
  1. Prepare the Marinade by whisking together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper in a mixing bowl.
  2. Marinate the Chicken in a resealable bag with the marinade for at least 30 minutes or overnight for better flavor.
Cooking
  1. Preheat your grill or grill pan over medium-high heat.
  2. Grill the marinated chicken for 6-7 minutes on each side until cooked through (165°F/75°C).
  3. Let the chicken rest for about 5 minutes before slicing.
Assembly
  1. Mix diced avocado with extra lime juice, olive oil, salt, and pepper, then add chopped cilantro or parsley.
  2. Serve the sliced chicken over jasmine or basmati rice, topped with the avocado mixture, chili flakes, and toasted sesame seeds.

Notes

Double the batch for meal prep; grilled chicken keeps well in the fridge for 3-4 days. Experiment with different herbs in the avocado mix.
