Method
 

Preparation
  1. Cut chicken thighs in half and trim any large fat pieces.
  2. Season both sides of chicken evenly with the spices, salt, and pepper. Rub it in well.
Cooking
  1. Heat 1 tablespoon of olive oil in a large skillet over high heat. Then lower to medium-high and add chicken without overcrowding.
  2. Cook for 8–10 minutes on one side, then flip and add the remaining tablespoon of oil. Cook for another 8–10 minutes or until nicely browned and cooked through.
  3. In the last minute of cooking, drizzle the honey and lime juice over the chicken. Toss the chicken around in the glaze until slightly caramelized.
  4. Let it rest for a minute, then slice or serve whole.
