Ingredients

Main Ingredients
  • 2 lb chicken wings Aim for fresh, quality wings for the best flavor.
  • 1.5 tablespoons olive oil Adds depth and aids in achieving crispiness; grapeseed oil is a good alternative.
  • 1 teaspoon salt Balances the flavors; you can use sea salt for a crunchier texture.
  • 1 tablespoon baking powder This secret ingredient guarantees the perfect crispy skin; don't skip it!
  • 1.5 teaspoons garlic powder Adds a savory depth; swap with fresh minced garlic for a punchy flavor.
  • 1.5 teaspoons onion powder Complements the garlic for a well-rounded taste; shallot powder works too.
  • 1.5 teaspoons smoked paprika Lends a gentle smokiness; regular paprika can suffice.
  • 4 tablespoons hot honey This is what ties everything together; you can make a homemade version if desired.
  • 1 lime Juice of 1 lime Offers a zesty brightness complementary to the dish; lemon juice can be a good swap.

Method

Preparation
  1. Preheat your oven to 410°F (210°C). Line a baking tray with foil or parchment and place a wire rack on top. Spray with oil if needed.
  2. In a small bowl, mix together the salt, baking powder, garlic powder, onion powder, and smoked paprika.
  3. Pat the chicken wings dry really well using paper towels (this is key!).
  4. Toss the wings in a large bowl with olive oil, then add half the spice mix. Flip and add the rest, tossing to coat evenly.
  5. Arrange the wings skin side up on the rack in a single layer.
Baking
  1. Bake for 22 minutes, flip, then bake for another 20 minutes until crispy and browned.
  2. Remove from oven and place half the wings in a bowl. Drizzle with 2 tablespoons of hot honey and juice of half a lime. Toss to coat. Repeat with the rest.
  3. Serve hot and sticky!

Notes

Common mistakes to avoid: Skipping the drying step will result in soggy wings. Overcrowding the baking tray limits crispness. Use high-quality hot honey for maximum impact. Adjust baking time based on the size of your wings.
