Instant Pot Chicken Breasts

Ingredients
  

Main Ingredients
  • 2 pounds boneless, skinless chicken breasts Substitute with thighs if desired.
  • 2 teaspoons Italian seasoning Substitute with dried oregano and basil if needed.
  • 1 teaspoon garlic powder Can use fresh garlic as a substitute.
  • 1 teaspoon smoked paprika Regular paprika can be used as a substitute.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Use fresh ground for better flavor.
  • 2 tablespoons olive oil Avocado oil can be used as a substitute.
  • 1 cup chicken broth Water can be used in a pinch but will lack flavor.

Method
 

Preparation
  1. In a small bowl, combine the Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  2. Rub the spice mix generously over each chicken breast.
Cooking
  1. Set the Instant Pot to the Sauté setting and heat the olive oil.
  2. Add the chicken breasts and sear on all sides. Do this in two batches if necessary. Remove chicken and set aside.
  3. Pour the chicken broth into the Instant Pot and place the trivet inside.
  4. Place the chicken on top of the trivet and close the lid.
  5. Set the valve to sealing and cook on Manual or High Pressure for 5 minutes (10 minutes for frozen chicken).
  6. After cooking, allow the Instant Pot to release naturally for 10 minutes, then quickly release the remaining pressure.
  7. Open the lid and transfer the chicken to a cutting board to rest for 5 minutes before slicing or serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Chicken can be frozen; allow to cool, wrap tightly, and freeze for up to three months. Thaw overnight in the fridge before reheating.
