Preparation
- In a small bowl, combine the Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
- Rub the spice mix generously over each chicken breast.
Cooking
- Set the Instant Pot to the Sauté setting and heat the olive oil.
- Add the chicken breasts and sear on all sides. Do this in two batches if necessary. Remove chicken and set aside.
- Pour the chicken broth into the Instant Pot and place the trivet inside.
- Place the chicken on top of the trivet and close the lid.
- Set the valve to sealing and cook on Manual or High Pressure for 5 minutes (10 minutes for frozen chicken).
- After cooking, allow the Instant Pot to release naturally for 10 minutes, then quickly release the remaining pressure.
- Open the lid and transfer the chicken to a cutting board to rest for 5 minutes before slicing or serving.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Chicken can be frozen; allow to cool, wrap tightly, and freeze for up to three months. Thaw overnight in the fridge before reheating.
