Preparation
- Preheat the oven to 400°F (200°C).
- Melt butter over medium heat in a pan and add the minced garlic. Sauté until fragrant, approximately 1-2 minutes.
- Stir in the fresh lemon juice to create a zesty sauce.
- Season cod fillets with salt and pepper and place on a baking sheet lined with parchment.
- Pour the lemon garlic butter sauce over the cod, making sure to coat them well.
- Bake for 12-15 minutes or until the cod flakes easily with a fork and is opaque.
- Garnish with chopped parsley and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. The cooked cod can also be frozen for two months.
