Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract; mix until integrated.
- Gradually add the dry ingredients to the wet mixture and mix on low until just combined.
- Scoop dough and roll into 1.5-inch balls, then roll in granulated sugar.
- Position dough balls on the prepared baking sheet, leaving 2 inches of space between each.
Baking
- Bake for 10-12 minutes, until edges are set but centers remain soft.
- Let cookies cool for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container for up to a week. Freeze cookie dough before or after baking for up to 3 months.
