  • 4 pieces chicken breasts Chicken thighs can be used as a juicy alternative.
  • 1 cup Italian dressing Opt for homemade for a healthier choice.
  • 1 cup cherry tomatoes, halved Canned diced tomatoes will work in a pinch.
  • 1 cup mozzarella cheese, shredded Feel free to use any cheese you love or have on hand.
  • 1/2 cup fresh basil, chopped Substitute with dried basil if necessary, but use sparingly.
  • to taste salt and pepper Essential for seasoning; adjust to your personal preference.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish and season with salt and pepper.
  3. Pour the Italian dressing over the chicken.
  4. Add the cherry tomatoes on top of the chicken.
Cooking
  1. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  2. Remove from the oven and sprinkle mozzarella cheese on top.
  3. Return to the oven for another 5-10 minutes, until the cheese is melted and bubbly.
  4. Garnish with fresh basil before serving.

Notes

For a crispier topping, broil the dish for a couple of minutes at the end. Serve with crusty bread to soak up the sauce. Store leftovers in an airtight container in the refrigerator for up to three days.
