Preparation
- Pound the chicken breasts using a meat mallet or rolling pin wrapped in saran wrap to flatten to an even thickness.
- Evenly sprinkle salt and pepper over both sides of the chicken breasts.
- Place the seasoned chicken into a ziplock bag or baking dish and add the Italian dressing as a marinade.
- Allow the chicken to marinate in the fridge for at least 30 minutes, preferably 2+ hours, for maximum flavor absorption.
Cooking
- Preheat the grill to medium-high heat before placing the marinated chicken on the grates.
- Cook the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Alternatively, preheat the oven to 400°F (200°C), transfer the marinated chicken to a greased baking dish, and bake for 20-25 minutes until fully cooked through and juices run clear.
Notes
For best results, use fresh Italian dressing. Pounding the chicken to uniform thickness helps in even cooking. Allow chicken to rest for a few minutes after cooking to retain juices.
