Preparation
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, sauté the chopped onion and minced garlic until fragrant and translucent.
- Add the ground beef or turkey and cook until browned.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; mix thoroughly.
- Spoon the flavorful mixture into the hollowed-out peppers, packing them generously.
- Place the peppers upright in a baking dish and cover with foil.
Cooking
- Bake for 30 minutes until the peppers are tender.
- Remove the foil, sprinkle mozzarella cheese on top, and bake for an additional 10 minutes until melted.
- Garnish with fresh parsley before serving.
Notes
Serve warm with olive oil or marinara for dipping. Can use leftover rice and add veggies to the filling. Watch baking time carefully.
