For the stuffed peppers
  • 4 large large bell peppers Use vibrant colors; can mix and match.
  • 1 pound ground beef or turkey Choose lean for a healthier option; vegetarian crumbles also great.
  • 1 cup cooked rice White, brown, or cauliflower rice; adjust as needed.
  • 1 can (14.5 oz) diced tomatoes Add tomatoes with Italian seasoning for extra flavor.
  • 1 cup shredded mozzarella cheese Substitute with Parmesan or Daiya for a dairy-free option.
  • 1 onion, chopped Yellow or white onions; shallots add a twist.
  • 2 cloves garlic, minced Fresh garlic gives a stronger flavor.
  • 1 teaspoon Italian seasoning Oregano or basil can also enhance the dish.
  • Salt and pepper to taste Essential for bringing out flavors.
  • Fresh parsley for garnish Chopped basil adds a fragrant touch.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté the chopped onion and minced garlic until fragrant and translucent.
  4. Add the ground beef or turkey and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; mix thoroughly.
  6. Spoon the flavorful mixture into the hollowed-out peppers, packing them generously.
  7. Place the peppers upright in a baking dish and cover with foil.
Cooking
  1. Bake for 30 minutes until the peppers are tender.
  2. Remove the foil, sprinkle mozzarella cheese on top, and bake for an additional 10 minutes until melted.
  3. Garnish with fresh parsley before serving.

Notes

Serve warm with olive oil or marinara for dipping. Can use leftover rice and add veggies to the filling. Watch baking time carefully.
