  • 1 piece Egg Replace with a flax egg for a vegan option.
  • 1/2 teaspoon Baking powder Check for freshness for best results.

  • Oil for frying Vegetable or canola oil Use for a high smoke point.

Method
 

Preparation
  1. In a bowl, combine sweet corn and chopped jalapenos.
  2. In another bowl, whisk together flour, cornmeal, baking powder, salt, and pepper.
  3. Beat the egg and add it to the corn mixture, then mix in the dry ingredients until just combined.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Drop spoonfuls of the batter into the frying oil and cook until golden brown on both sides, about 2-3 minutes each side.
  3. Remove and drain on paper towels.
Serving
  1. Serve warm with your favorite dipping sauce.

Notes
