Ingredients
  

Main Ingredients
  • 2 pieces Very ripe plantains Ensure they are dark spotted for maximum sweetness.
  • 1 cup Plain flour
  • 2 tablespoons Sugar Adjust according to taste.
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Ground cinnamon
  • 1/2 teaspoon Salt Balances the sweetness.
  • 1/4 cup Water Adjust for desired batter consistency.
  • Oil for frying Cooking oil Use enough to cover the bottom of the frying pan.

Method
 

Preparation
  1. Peel the plantains and cut them into small slices in a bowl.
  2. Use a fork or a masher to crush the plantains until smooth but slightly chunky.
  3. Add the remaining ingredients to the mashed plantain, excluding the cooking oil.
  4. Stir together until the mixture forms a soft paste, resembling pancake batter but not overly runny.
Cooking
  1. Pour cooking oil into a frying pan over medium heat, ensuring the oil does not cover the fritters.
  2. Once the oil is hot, use a tablespoon to scoop portions of the batter and carefully add them into the oil.
  3. Cook until golden brown on both sides and thoroughly cooked inside, approximately 2-3 minutes per side.

Notes

For extra crispy fritters, ensure your oil is hot before adding the batter. Store leftovers in an airtight container in the fridge for up to three days or freeze for longer storage.
