  • 2 large ripe plantains Ensure plantains are very ripe, ideally with blackened skin.
  • 1 cup plain flour Can be substituted with almond flour for a gluten-free option.
  • 2 tablespoons sugar Enhances sweetness of the fritters.
  • 1 teaspoon vanilla extract Adds aromatic flavor.
  • 1/2 teaspoon nutmeg Infuses a warm spice.
  • 1 teaspoon ground cinnamon Provides cozy sweetness.
  • 1/2 teaspoon salt Balances sweetness.
  • 1/4 cup water Adjusts batter consistency.
  • 1 cup cooking oil For frying.

Preparation
  1. Peel the plantains and cut them into small slices. Crush them in a bowl using a fork or masher until smooth.
  2. Add the flour, sugar, vanilla extract, nutmeg, cinnamon, salt, and water to the crushed plantains and mix until you achieve a soft paste.
Cooking
  1. Heat the cooking oil in a frying pan over medium heat, ensuring the oil doesn’t completely cover the fritters.
  2. Scoop portions of the batter using a tablespoon and gently add them to the hot oil.
  3. Fry the fritters until they are golden brown on both sides and cooked through, typically around 3-4 minutes per side.

Notes

For an ultra-crispy exterior, ensure the oil is hot before adding the fritters. Use very ripe plantains for best flavor. Drain cooked fritters on paper towels to absorb excess oil.
