  • 2 medium Ripe plantains Very ripe plantains are best for sweetness.
  • 1 cup Plain flour Helps bind the ingredients.
  • 2 tablespoons Sugar Enhances sweetness.
  • 1 teaspoon Vanilla extract Adds aroma.
  • 1 teaspoon Nutmeg Infuses warm spice.
  • 1 teaspoon Ground cinnamon Provides sweet-spicy flavor.
  • 1 pinch Salt Enhances overall flavor.
  • 1/2 cup Water Adjusts batter consistency.
  • 1 cup Cooking oil For frying.

Method
 

Preparation
  1. Peel the plantains and cut them into small slices in a bowl, then crush using a fork or masher until smooth.
  2. Add the flour, sugar, vanilla extract, nutmeg, ground cinnamon, salt, and water to the crushed plantain and mix until you achieve a soft paste.
Cooking
  1. Add cooking oil to a frying pan and set to medium heat; ensure the oil doesn’t completely cover the fritters.
  2. Once the oil is hot, scoop portions of the batter using a tablespoon and gently add them to the oil.
  3. Fry the fritters until they are golden brown on both sides and cooked through, typically around 3-4 minutes per side.

Notes

For an ultra-crispy texture, ensure the oil is at the right temperature. Use very ripe plantains and consider adding diced bell peppers or shredded cheese for variations.
