Ingredients

For the Marinade
  • 1/2 cup fresh orange juice Adds brightness and acts as a natural tenderizer.
  • 1/4 cup Dijon mustard Gives a tangy flavor that complements the orange juice.
  • 2 tablespoons olive oil A heart-healthy fat that keeps the chicken juicy.
  • 2 cloves garlic, minced Enhances the overall taste with warmth and depth.
  • Salt and pepper to taste Essential for flavor balance.
For the Chicken
  • 4 boneless, skinless chicken breasts A high-protein base that absorbs flavors well.
  • Fresh herbs (optional, for garnish) Adds visual appeal and freshness.

Method

Preparation
  1. Whisk together the marinade: In a bowl, combine orange juice, Dijon mustard, olive oil, minced garlic, salt, and pepper. Whisk until well blended.
  2. Marinate the chicken: Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over. Seal the bag or cover the dish and refrigerate for at least 30 minutes to 2 hours.
Grilling
  1. Preheat the grill: Set your grill to medium-high heat.
  2. Prepare the chicken for grilling: Remove the chicken from the marinade and discard the marinade. Patting dry helps achieve a better sear.
  3. Grill the chicken: Grill the chicken for 6-7 minutes on each side, or until the juices run clear and the internal temperature reaches 165°F.
  4. Let the chicken rest: After grilling, remove the chicken from the grill and let it rest for a few minutes.
  5. Garnish and serve: Garnish with fresh herbs if desired and pair with your favorite sides.

Notes

Leftovers are perfect for meal prep throughout the week. Can substitute lime juice or use honey mustard for sweetness.
