- In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
- Add the chopped kale to the bowl and massage the kale with the dressing for a couple of minutes until it wilts slightly.
- Top with your choice of nuts, cheese, or seeds.
- Serve immediately or let it sit for a few minutes to enhance the flavors.
Notes
Choose organic kale if possible. Experiment with different toppings for variety. Store dressed salad in the refrigerator for up to 2 days.
