Method
 

Preparation
  1. Brown the beef. Heat a non-stick frying pan and fry the beef mince on medium heat until cooked through, about five minutes. Set aside.
  2. Cook the vegetables. In the same pan, add olive oil, along with onion, diced carrots, and celery. Cook for five minutes on medium heat until softened.
Cooking
  1. Combine all ingredients. Return the beef to the pan with the veggies, then add all remaining ingredients: pickled jalapeños, chopped tomatoes, tomato puree, Worcestershire sauce, cacao, spices, bay leaf, and beef stock. Stir well to combine.
  2. Simmer the chili. Cook on medium-low heat for about twenty minutes, stirring occasionally to prevent sticking, until thickened to your preference.
  3. Adjust seasoning. Taste and adjust seasoning as needed, including spice levels. Serve topped with yogurt, coriander, and optional parmesan.

Notes

Consider using freshly ground spices for bolder flavor. For a thicker consistency, simmer uncovered longer. Add apple cider vinegar or fresh lime juice for depth. Be cautious with the heat - gradually increase spice levels while tasting.
