Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, almond flour, erythritol, vanilla extract, ground cinnamon, eggs, baking powder, and salt.
  3. Mix until the batter is smooth and well blended, which will take about 2-3 minutes using an electric mixer or whisk.
  4. Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.
  5. Bake for 20-25 minutes or until the edges begin to turn golden brown and a toothpick comes out clean from the center.
  6. Allow the bites to cool in the dish for about 10 minutes before cutting them into bite-sized pieces.
  7. Cut into small squares or bites and serve either warm or at room temperature.

Tip: Store any leftovers in an airtight container in the refrigerator for up to 5 days. These bites can also be frozen for up to 3 months.
