Preparation
  1. Preheat your oven to 350 degrees.
  2. In a large skillet over medium-high heat, add the ground beef along with diced onions, salt, garlic powder, and pepper. Sauté until the beef is cooked through, breaking it up into small pieces as it cooks. Drain any excess grease.
  3. Transfer the cooked beef mixture to a baking dish. Add the drained green beans and 1 cup of shredded cheese, stirring everything together.
  4. In a small bowl, combine cottage cheese, mayonnaise, sour cream, and tamari. Stir until incorporated, then pour this mixture over the beef combination and stir to combine.
  5. Top the casserole with the remaining 1 cup of shredded cheese and bake in the preheated oven for 30-40 minutes until bubbly and golden.
  6. Let the casserole sit for 5 minutes before serving.

Notes

For added spice, include chili flakes or diced jalapeños. This casserole is great for meal prep—double the recipe and freeze half for later use.
