Ingredients
  

For the cake
  • 1/3 cup Almonds or Pecans, ground into a flour-like consistency Use store-bought almond flour if preferred.
  • 1 tbsp Unsweetened Cocoa Powder For a lighter taste, opt for carob powder.
  • 1 tbsp Granulated Erythritol Adjust sweetness to your liking.
  • 1 pinch Stevia or additional sugar Enhances sweetness without carbs.
  • 1/8 tsp Salt Balances flavors and enhances sweetness.
  • 1/4 tsp Baking Powder Provides leavening for a lighter texture.
  • 3 tbsp Milk of Choice Use almond milk, coconut milk, or any preferred milk.
  • 1/4 tsp Pure Vanilla Extract Adds aroma and depth of flavor.

Method
 

Preparation
  1. If using almonds, grind them in a blender or food processor until they achieve a flour-like consistency.
  2. In a greased ramekin or small mug, combine all the ingredients thoroughly.
Cooking
  1. Bake in a preheated 350°F (175°C) oven for about 10 minutes or cook in the microwave for 30 seconds followed by two 15-second intervals to achieve desired gooeyness.
  2. Once done, let the mug cake cool slightly before enjoying.

Notes

Enjoy topped with whipped cream or fresh berries for extra indulgence. Leftovers can be stored in an airtight container in the fridge for up to 2 days. Freezing is possible; wrap tightly and freeze for up to a month.
