Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the softened cream cheese and erythritol until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine almond flour, baking powder, and salt.
- Gradually add the dry mixture to the cream cheese mixture until well mixed.
- Gently fold in the sliced strawberries.
- Spread the mixture evenly in the prepared 8-inch baking dish.
- Drizzle the melted butter over the top of the mixture.
Baking
- Bake for 30-35 minutes or until the top is golden brown.
- Let cool slightly before serving.
Notes
Serve warm with whipped cream or low-carb ice cream. Store leftovers in an airtight container for up to 5 days. Can be frozen for up to 3 months.
