- In a small bowl, combine olive oil, lemon juice, lemon zest, Dijon mustard, honey, dried oregano, salt, and black pepper. Whisk until smooth.
- Add the drained kidney beans to the dressing. Gently mix until all the beans are well-coated. Allow them to sit while you prepare the veggies for added flavor.
- Dice the cucumber and bell pepper, halve the cherry tomatoes, and slice the red onion thinly. Aim for small, uniform pieces for easier eating.
- In a large bowl, combine the prepped vegetables, olives, crumbled feta cheese, and marinated kidney beans (with dressing).
- Gently toss the ingredients together until mixed; don’t worry if the feta crumbles a little. Transfer to a serving bowl and enjoy right away.
Notes
For added crunch, include toasted nuts or seeds like sunflower seeds or walnuts. Taste and adjust the seasoning before serving.
