Preparation
  1. Preheat your grill to high heat.
  2. In a medium bowl, gently knead together the lamb, garlic, mixed herbs, rosemary, salt, and pepper until just combined.
  3. Shape the mixture into four equal patties, ensuring they are slightly larger than your buns as they will shrink during cooking.
Cooking
  1. If grilling, place burgers on the grill and cook until browned on the bottom, about 3 to 5 minutes.
  2. Flip and cook until they reach an internal temperature of 135°F for medium, or 145°F for medium-well, about 3 to 5 minutes longer.
  3. Once cooked, allow the burgers to rest for 3 to 5 minutes before serving to keep them juicy.
Assembly
  1. While the burgers rest, puree feta, Greek yogurt, and lemon juice and zest in a food processor or mash them by hand with a fork until creamy.
  2. Spread the whipped feta over the toasted buns, place the lamb burgers on top, and add any optional toppings.
