  • 1 tablespoon lemon juice (freshly squeezed) Brightens up the flavors; bottled lemon juice will work in a pinch but fresh is best.
  • 1 tablespoon fresh garlic (minced) Provides depth of flavor; garlic powder can work as an alternative.
  • 1/2 teaspoon sea salt Enhances all other flavors; sea salt is recommended, but kosher salt can easily replace it.
  • 1/2 teaspoon red pepper flakes Adds a mild heat; feel free to omit it for a milder profile.
  • 2 tablespoons capers (drained) Introduces a briny bite; olives can replace capers if desired.
  • 1/2 teaspoon paprika Gives a smoky note and beautiful color; smoked paprika can also be used for extra flavor.

Preparation
  1. Preheat the oven to 425°F. Lightly spray a baking dish with nonstick spray.
  2. In a small bowl, whisk the melted butter, lemon juice, minced garlic, salt, and red pepper flakes. Stir in the drained capers to incorporate all flavors.
  3. Place the cod fillets in the prepared baking dish and pour the butter mixture over the top. Use a brush to evenly coat the fillets in the rich sauce.
  4. Sprinkle the fillets with paprika for that beautiful finish.
Cooking
  1. Bake uncovered until the fish is fully cooked, opaque, and flakes easily with a fork, approximately 15 minutes (25 minutes if using frozen fish).
  2. Serve immediately for the best experience.

Notes

To avoid overcooking, keep an eye on the fish. For a crispy texture, broil the fish for the last minute of cooking. Pair with a refreshing green salad for a well-rounded meal. Store any leftovers in an airtight container in the refrigerator for up to two days.
