  1. Cook the pasta: Boil the penne pasta according to package directions until al dente, drain, and set aside.
  2. Prepare the chicken: In a large skillet, add olive oil and diced chicken breast, seasoning with salt and pepper.
  3. Cook the chicken: Sauté over medium-high heat for about 5 minutes, stirring frequently until chicken is beginning to brown.
  4. Add garlic: When the chicken is halfway cooked, add minced garlic and cook for 1 minute until fragrant.
  5. Add butter and lemon juice: Stir in unsalted butter and lemon juice until the butter melts and chicken is fully cooked through, about another 5 minutes.
  6. Combine with pasta: Add the cooked pasta to the chicken mixture and toss gently to combine.
  7. Finish with parsley and cheese: Stir in finely minced parsley, then top with freshly shaved Parmesan cheese.
  8. Adjust seasoning: Taste and adjust salt and pepper as needed before serving hot.

Notes

For the best results, ensure your skillet is large enough to prevent crowding the chicken. Save a splash of pasta water before draining to loosen the sauce if needed.
