Preparation
- Preheat the oven to the HIGH broiler setting.
- Line a half sheet pan with aluminum foil for easier cleanup.
- Add the trimmed broccoli florets to the prepared pan and drizzle with 2 tablespoons of olive oil, salt, and pepper. Toss to coat.
- Broil the broccoli for about 5 minutes, or until lightly browned.
- Carefully remove the pan and toss the broccoli for even cooking.
- Scatter the cleaned shrimp over the broccoli and drizzle with the remaining 2 teaspoons of olive oil.
- Return the pan to the broiler for 2 to 3 minutes until the shrimp are fully cooked and opaque.
- In a small bowl, melt the unsalted butter and mix with the lemon juice.
- Drizzle the lemon butter sauce over the shrimp and broccoli, season to taste, and serve immediately.
Notes
For the best flavor, use fresh or properly thawed shrimp. Adjust lemon and seasoning to your taste. Don’t overcrowd the pan to avoid steaming.
