  • 1 head broccoli Trimmed into florets
  • 2 tablespoons olive oil For roasting the vegetables
  • 1 teaspoon kosher salt For seasoning vegetables and shrimp
  • 1 teaspoon black pepper For seasoning
  • 1 pound raw shrimp Peeled and deveined
  • 4 tablespoons unsalted butter For the sauce
  • 2 tablespoons lemon juice Freshly squeezed for best flavor

Method
 

Preparation
  1. Preheat the oven. Set the broiler on high and place the top rack about 4 inches below the heating element.
  2. Line a half sheet pan with aluminum foil, add the broccoli florets, drizzle with 2 tablespoons of olive oil, and season with salt and pepper; toss to coat.
Broiling
  1. Place the pan under the broiler for about 5 minutes or until the broccoli is lightly browned and tender.
  2. Flip the broccoli, then add the cleaned shrimp to the pan and drizzle with the remaining olive oil; toss to combine.
  3. Return the pan to the broiler for 2 to 3 minutes, or until the shrimp are pink and opaque throughout.
Making the Sauce
  1. In a small bowl, melt the unsalted butter and mix in the freshly squeezed lemon juice.
  2. Pour the lemon butter mixture over the shrimp and broccoli, season with extra salt and pepper if desired, and serve immediately.

Notes

For added flavor, consider marinating the shrimp in garlic and lemon juice before cooking. Keep an eye on the broiler, as it can quickly turn the food crispy if not monitored.
