Method
 

Preparation
  1. Combine coconut milk with enough water to achieve a total of two cups of liquid.
  2. In a medium bowl, combine the coconut milk mixture with lemon zest, lemon juice, maple syrup, turmeric, and collagen (if using).
  3. Stir in the chia seeds evenly into the mixture.
  4. Allow the mixture to sit for 20 minutes, stirring every 5 minutes, until it thickens to a pudding-like consistency.
  5. Taste the pudding and adjust the sweetness with more maple syrup or add more lemon juice for a tangier flavor if desired.
  6. Chill the pudding in the refrigerator for optimal results, ideally overnight, or at least for 30 minutes.
Serving
  1. Serve the chilled pudding topped with extra lemon zest and your choice of optional garnishes.
  2. Store any leftovers in a sealed jar in the refrigerator for up to five days.

Notes

For best results, use fresh, organic lemons and consider blending the mixture before adding chia seeds for a smoother texture. Letting the pudding chill overnight enhances flavors and texture.
