Preparation
- Combine coconut milk with enough water to achieve a total of two cups of liquid.
- In a medium bowl, combine the coconut milk mixture with lemon zest, lemon juice, maple syrup, turmeric, and collagen (if using).
- Stir in the chia seeds evenly into the mixture.
- Allow the mixture to sit for 20 minutes, stirring every 5 minutes, until it thickens to a pudding-like consistency.
- Taste the pudding and adjust the sweetness with more maple syrup or add more lemon juice for a tangier flavor if desired.
- Chill the pudding in the refrigerator for optimal results, ideally overnight, or at least for 30 minutes.
Serving
- Serve the chilled pudding topped with extra lemon zest and your choice of optional garnishes.
- Store any leftovers in a sealed jar in the refrigerator for up to five days.
Notes
For best results, use fresh, organic lemons and consider blending the mixture before adding chia seeds for a smoother texture. Letting the pudding chill overnight enhances flavors and texture.
