Main ingredients
  • 1 lb Chicken breast Can substitute with rotisserie chicken.
  • 1 cup Orzo pasta Can use any small pasta.
  • 4 cups Chicken broth Vegetable broth works too for a vegetarian option.
  • 1 each Lemon juice and zest Always use fresh.
  • 3 cloves Garlic Feel free to add more for extra punch.
  • 2 cups Spinach Kale or Swiss chard can substitute.
  • 2 tbsp Butter Can substitute with margarine.
  • 2 tbsp Olive oil Can substitute with vegetable oil.
  • 0.5 cup Parmesan cheese Can omit for a dairy-free version.
  • 1 tsp Italian seasoning Adjust to taste.
  • to taste Salt and pepper Essential for flavor.

Method
 

Preparation
  1. Add the oil, butter, and onion to a pot over medium-high heat.
  2. Sauté the onion for 3-4 minutes.
  3. Add the garlic, Italian seasoning, and orzo. Cook for 2-3 minutes, stirring often.
  4. Stir in the chicken broth, lemon juice, and cream.
  5. Once it starts to bubble, continue cooking for 10 minutes, uncovered, stirring fairly often.
  6. Stir in the chicken, then take the pot off the heat.
  7. Stir in the parmesan and spinach, cover the pot for 3-5 minutes or until thickened to your liking.
  8. Season with salt & pepper as needed and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of broth to restore creaminess. Can be frozen for up to 2 months.
