Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another large bowl, beat the softened butter and granulated sugar until light and fluffy for about 2-3 minutes.
  4. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter-sugar mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop the dough into balls and roll them in powdered sugar.
Baking
  1. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are set and the centers remain soft.
  3. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for about a week. You can also freeze them for up to 3 months.
