Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another large bowl, beat the softened butter and granulated sugar until light and fluffy for about 2-3 minutes.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter-sugar mixture and beat until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop the dough into balls and roll them in powdered sugar.
Baking
- Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set and the centers remain soft.
- Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To keep your cookies fresh, store them in an airtight container at room temperature for about a week. You can also freeze them for up to 3 months.
