Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine broccoli florets and sliced carrots.
- In a small bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Whisk together until well blended.
- Pour the mixture over the vegetables and toss to coat evenly.
- Spread the veggies on a baking sheet in a single layer.
Cooking
- Roast in the oven for 20-25 minutes, or until tender and slightly caramelized. Check halfway to stir for even cooking.
- Once done, remove from the oven and serve warm, optionally with a sprinkle of additional lemon juice.
Notes
This dish can be served cold as part of a fresh lunch or added to salads. It stores well in the refrigerator for up to 3 days, and can also be frozen for up to 3 months.
