Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine broccoli florets and sliced carrots.
  3. In a small bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Whisk together until well blended.
  4. Pour the mixture over the vegetables and toss to coat evenly.
  5. Spread the veggies on a baking sheet in a single layer.
Cooking
  1. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized. Check halfway to stir for even cooking.
  2. Once done, remove from the oven and serve warm, optionally with a sprinkle of additional lemon juice.
