Method
 

Preparation
  1. Combine the graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt in a mixing bowl until well mixed.
  2. Press the mixture evenly into the bottom of a baking pan to create a firm and compact crust.
  3. Preheat the oven to 350°F (175°C).
  4. Place the pan in the preheated oven and bake for about 8 to 10 minutes until lightly golden and set.
  5. In a separate bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, lemon zest, and a pinch of salt until smooth.
  6. Spread the lemon filling evenly over the baked crust.
  7. Return the pan to the oven and bake for an additional 15 to 20 minutes, until the filling is set and the edges begin to firm up.
  8. Remove the pan from the oven and allow the bars to cool at room temperature.
  9. Once cool, refrigerate for at least 2 hours or until completely chilled and firm.
  10. Cut the bars into squares, dust with confectioners' sugar, and garnish with extra lemon zest before serving.

Notes

Use fresh lemons for the best flavor. Watch for a light golden color while baking the crust to avoid a soggy base. Store properly to maintain texture.
