Preparation
- Combine the graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt in a mixing bowl until well mixed.
- Press the mixture evenly into the bottom of a baking pan to create a firm and compact crust.
- Preheat the oven to 350°F (175°C).
- Place the pan in the preheated oven and bake for about 8 to 10 minutes until lightly golden and set.
- In a separate bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, lemon zest, and a pinch of salt until smooth.
- Spread the lemon filling evenly over the baked crust.
- Return the pan to the oven and bake for an additional 15 to 20 minutes, until the filling is set and the edges begin to firm up.
- Remove the pan from the oven and allow the bars to cool at room temperature.
- Once cool, refrigerate for at least 2 hours or until completely chilled and firm.
- Cut the bars into squares, dust with confectioners' sugar, and garnish with extra lemon zest before serving.
