Preparation
- Preheat the oven to 400°F and prepare a large baking sheet by greasing it.
- Take the salmon filets out of the fridge and let them sit at room temperature for 20 minutes.
- Pat the filets dry with a paper towel and arrange them on the greased baking sheet, seasoning them generously with salt.
- Slice half of one lemon into four thin rounds and cut the other half into wedges for serving.
- Zest the second lemon and juice half of it into a bowl.
Cooking
- In the bowl, whisk together minced garlic, black pepper, lemon juice, and olive oil or melted butter along with the lemon zest.
- Spoon the lemon-garlic mixture over the salmon filets, ensuring all are well-covered without dry spots, and top with lemon slices.
- Place the baking sheet in the oven and bake for 10 to 18 minutes, depending on the thickness of the filets and your preferred doneness. Use a meat thermometer to check for doneness.
- Garnish with lemon wedges and additional cracked black pepper before serving.
Notes
For best results, start with room temperature salmon, avoid overcrowding the baking sheet, and consider broiling for a crispier texture. Adjust seasoning to taste.
