Preparation
  1. Preheat the oven to 400°F and prepare a large baking sheet by greasing it.
  2. Take the salmon filets out of the fridge and let them sit at room temperature for 20 minutes.
  3. Pat the filets dry with a paper towel and arrange them on the greased baking sheet, seasoning them generously with salt.
  4. Slice half of one lemon into four thin rounds and cut the other half into wedges for serving.
  5. Zest the second lemon and juice half of it into a bowl.
Cooking
  1. In the bowl, whisk together minced garlic, black pepper, lemon juice, and olive oil or melted butter along with the lemon zest.
  2. Spoon the lemon-garlic mixture over the salmon filets, ensuring all are well-covered without dry spots, and top with lemon slices.
  3. Place the baking sheet in the oven and bake for 10 to 18 minutes, depending on the thickness of the filets and your preferred doneness. Use a meat thermometer to check for doneness.
  4. Garnish with lemon wedges and additional cracked black pepper before serving.

Notes

For best results, start with room temperature salmon, avoid overcrowding the baking sheet, and consider broiling for a crispier texture. Adjust seasoning to taste.
