Preparation
- Cook the pasta according to package instructions, remembering to reserve one cup of pasta water before draining.
- In a skillet, warm your choice of oil over medium-high heat.
- Slice the chicken breast horizontally to create two thinner pieces for even cooking.
- Sprinkle salt and pepper on both sides of the chicken.
- Sear the chicken in the hot skillet for 3-5 minutes per side until golden and cooked through.
- Remove the chicken from the skillet and set aside to rest.
Cooking
- Lower the heat and add the reserved pasta water, lemon zest, lemon juice, ricotta, and Parmesan into the skillet.
- Toss in the drained pasta and mix well to coat everything, adding additional reserved water as needed.
- Cut the rested chicken into strips and place it on top of the pasta.
- Stir in the fresh spinach and heat until just wilted.
- Sprinkle extra Parmesan on top and serve hot.
Notes
For better flavor, use high-quality fresh ingredients. Reserve pasta water for creaminess. Avoid overcooking chicken and wilting spinach.
