  • 2 tbsp lemon juice Adds acidity and enhances the overall flavor.
  • 15 oz part-skim ricotta Creamy cheese that brings richness.
  • 1/2 cup shredded Parmesan Adds a sharp, nutty flavor.
  • 4 oz fresh spinach Provides color and nutrition.

Method
 

Preparation
  1. Cook the pasta according to package instructions, remembering to reserve one cup of pasta water before draining.
  2. In a skillet, warm your choice of oil over medium-high heat.
  3. Slice the chicken breast horizontally to create two thinner pieces for even cooking.
  4. Sprinkle salt and pepper on both sides of the chicken.
  5. Sear the chicken in the hot skillet for 3-5 minutes per side until golden and cooked through.
  6. Remove the chicken from the skillet and set aside to rest.
Cooking
  1. Lower the heat and add the reserved pasta water, lemon zest, lemon juice, ricotta, and Parmesan into the skillet.
  2. Toss in the drained pasta and mix well to coat everything, adding additional reserved water as needed.
  3. Cut the rested chicken into strips and place it on top of the pasta.
  4. Stir in the fresh spinach and heat until just wilted.
  5. Sprinkle extra Parmesan on top and serve hot.

Notes

For better flavor, use high-quality fresh ingredients. Reserve pasta water for creaminess. Avoid overcooking chicken and wilting spinach.
