Method
 

Preparation
  1. Preheat your oven to 425 degrees Fahrenheit.
  2. In a measuring cup or small bowl, combine the lemon juice, olive oil, melted butter, minced rosemary, salt, pepper, and minced garlic. Stir well to blend.
  3. Place the chicken thighs into a baking dish and pour the marinade over, ensuring each piece is coated.
  4. Arrange the chicken with the skin side down.
Cooking
  1. Bake the chicken for 20 minutes.
  2. Flip the chicken so that the skin side is up and continue to bake for another 30-40 minutes until the chicken is fully cooked and reaches a golden brown hue.
  3. Once finished, serve the chicken topped with minced parsley and lemon slices to brighten the presentation.

Notes

Marinade the chicken for at least an hour (or overnight) for deeper flavor. This recipe is great for meal prepping and can be easily scaled up.
