  • 1/4 cup Green Onions Chives can be substituted.

  • 1 cup Corn Frozen corn works just as well as fresh.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut the potatoes into cubes and toss them in olive oil, salt, and pepper.
Cooking
  1. Spread the potatoes on a baking sheet and roast for 25-30 minutes until crispy and golden.
  2. In a skillet, cook the ground beef over medium heat until browned. Add taco seasoning and cook according to package instructions.
Assembly
  1. Once the potatoes are done, remove them from the oven and assemble your bowls by layering the potatoes, ground beef, cheese, sour cream, green onions, salsa, black beans, and corn.
  2. Customize with your favorite toppings and serve warm.

Notes
