Ingredients

Main ingredients
  • 2 medium medium potatoes (russet recommended) Choose russet potatoes for optimal texture.
  • 1 lb tender steak (sirloin or ribeye) This adds a protein-packed punch; you can substitute ground beef for a quicker option.
  • 1 cup shredded cheese (e.g., cheddar) Adds creaminess and flavor. Low-fat options work well too.
  • 1/2 cup sour cream Enhances the richness; Greek yogurt can be a healthy substitute.
  • 2 tablespoons olive oil Keeps the potatoes moist; avocado oil is a great alternative.
  • to taste salt and pepper Essential for flavor enhancement; consider garlic powder for extra taste.
  • for garnish chives or green onions Adds color and a fresh touch.

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes with a fork. Rub with olive oil and season with salt.
Baking Potatoes
  1. Bake for 45-60 minutes until tender. You'll know they're done when you can easily pierce them with a fork.
Cooking the Steak
  1. While the potatoes are baking, heat a skillet over medium-high heat.
  2. Season the steak with salt and pepper, then sear in the skillet for about 4-5 minutes per side until it reaches your desired doneness.
  3. Let the steak rest for a few minutes before slicing.
Assembling the Dish
  1. Remove potatoes from the oven and let cool slightly. Cut them in half and scoop out some of the flesh, leaving enough to keep the skin sturdy.
  2. Mix the scooped potato flesh with shredded cheese and sour cream.
  3. Fill the potato skins with this mixture. Top with sliced steak, additional cheese, and garnish with chives or green onions.
Final Baking
  1. Return to the oven for an additional 10 minutes until cheese is melted.
Serving
  1. Serve warm and enjoy your hearty loaded steak potato.

Notes

Consider pairing the loaded steak potatoes with a fresh salad. For best results, allow cheese and sour cream to come to room temperature before mixing.
