- In a food processor, add honey (or maple syrup) and cottage cheese. Blend until smooth.
- Add in most of the mango chunks and pulse a few times to combine, making it as smooth or as chunky as you like.
- Pour the mixture into popsicle molds, filling each mold adequately.
- Place the molds in the freezer for at least 3 hours or overnight until completely set.
- When ready to enjoy, let the popsicles thaw for 3 to 5 minutes before biting into them.
- Optional: For extra creaminess, strain the cottage cheese with a cheese cloth or nut milk bag before blending.
Notes
Use high-quality mangoes for the best flavor. Experiment with additional flavors like herbs or different fruits. Store in the freezer and enjoy within two months.
