  • 2 ripe mangoes, diced Substitute with diced pineapple if mangoes aren't in season.
  • 4 cups green cabbage, shredded Napa or red cabbage can also work.
  • 1/2 piece red bell pepper, thinly sliced Substitute with yellow or orange bell peppers.
  • 1/4 cup red onion, thinly sliced Can be replaced with green onions for a milder taste.
  • 1/4 cup fresh cilantro, chopped Swap with parsley if cilantro isn’t favored.
  • Juice of 2 pieces limes Lemon juice can serve as an alternative.
  • 2 tablespoons olive oil Avocado oil is a great substitute.
  • Salt and pepper to taste Enhance flavor according to personal preference.

Method
 

Preparation
  1. In a large mixing bowl, combine the diced mangoes, shredded cabbage, red bell pepper, red onion, and cilantro. Toss gently to mix well.
Making the Dressing
  1. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until well-blended.
Combining the Slaw
  1. Pour the dressing over the slaw and gently toss until everything is well coated. The vibrant colors should shine through.
Chilling
  1. For the best flavor, let your slaw sit in the fridge for at least 30 minutes before serving. This allows the flavors to meld beautifully.
Serving
