Ingredients

Main Ingredients
  • 2 pieces chicken breasts Lean protein; consider tofu for a vegetarian option.
  • 8 oz pasta (such as penne or fettuccine) Provides the backbone of the recipe; gluten-free pasta works too.
  • 2 tbsp olive oil Adds richness; avocado oil is a great substitute.
  • 4 cloves garlic, minced Infuses flavor; garlic powder can work in a pinch.
  • 1 cup heavy cream Delivers creaminess; substitute with coconut milk for a dairy-free alternative.
  • 1/2 cup sun-dried tomatoes, chopped Adds a burst of sweetness; roasted red peppers are tasty too.
  • 1/2 cup Parmesan cheese, grated Enhances flavor; nutritional yeast may be used for a vegan twist.
  • to taste Salt and pepper Essential for elevating flavors.
  • for garnish Fresh basil A fragrant finish; parsley can also brighten the dish.

Method

Preparation
  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  4. Pour in heavy cream and bring to a simmer. Stir in sun-dried tomatoes and Parmesan cheese, mixing until smooth.
  5. Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Toss everything together until well-coated in the sauce.
  6. Adjust seasoning with additional salt and pepper if necessary.
  7. Serve hot, garnished with fresh basil.

Notes

Always taste your sauce before serving to adjust seasoning. Use fresh ingredients where possible for the best flavor.
