Cooking Steps
  1. Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. Sear the Chicken: In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper and sear until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  3. Sauté the Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Make the Cream Sauce: Pour in heavy cream and add sun-dried tomatoes and herbs. Stir well to combine and let it simmer for a few minutes until the sauce thickens slightly.
  5. Combine Chicken and Pasta: Slice the cooked chicken and return it to the skillet, then add the cooked pasta. Toss everything together until well coated with the creamy sauce.
  6. Serve Hot: Serve immediately, garnished with parmesan cheese if desired.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk or chicken broth. Add spinach or peas for extra nutrition. This meal pairs beautifully with a side salad.
