  • 2 pieces boneless, skinless chicken breasts
  • 1 cup low sodium chicken broth
  • 1/2 cup mayonnaise
  • 1/2 cup full fat sour cream
  • 1 small shallot, minced
  • 1/2 cup oil packed sun-dried tomatoes, chopped
  • 2 tablespoons oil from sun-dried tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup grated fresh parmesan
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper

Method
 

Cooking Chicken
  1. Place chicken breasts in a wide skillet and cover with chicken broth.
  2. Bring to a boil, then reduce heat to low.
  3. Cover and simmer for 20-25 minutes until cooked through and no longer pink inside.
  4. Let the chicken rest, then shred it using two forks.
  5. Keep a small amount of the cooked broth for the salad.
Combining Ingredients
  1. In a large bowl, mix shredded chicken, mayonnaise, sour cream, shallot, sun-dried tomatoes, oil from the tomatoes, basil, parmesan, salt, garlic powder, and pepper.
  2. Gradually add reserved broth until desired creaminess is achieved.
  3. Taste the mixture and adjust salt and pepper if needed.
Serving
  1. Serve immediately or refrigerate for at least 30 minutes for flavors to meld.

Notes

Choose high-quality ingredients for the best flavor. Fresh herbs enhance the taste. Allowing to chill for 30 minutes allows flavors to blend.
